Thanks for the info. We'll be on Waikiki closer to the Diamond Head side. We both want to do some scuba diving, but don't have much experience with it and hiking as well. I'm really interested in what kinds of food recommendations you might have too.
We also have two days in Kauaii that we don't know what to do with yet, but it sounded like seeing Waimea Canyon would be a good thing to do.

For hiking, I'd try Bike Hawaii or Oahu Nature Tours. http://www.bikehawaii.com/ http://www.oahunaturetours.com/
Don't know off hand which scuba companies have the best beginner dives, so you might have to call around a bit.
On Kauai, going up to Waimea Canyon is a good idea, but it's just a drive and a nice view, no activities or anything. But it's cool to see.
Kauai has a lot of really good zipline hike/zip activities. And I've always wanted to do the mountain tubing with Kauai Backcountry Adventures. http://www.kauaibackcountry.com You float in inner tubes down old sugar cane field irrigation canals.
Kauai also has a lot of ATV tours too if that sounds fun.

Oh, and I'm not really a foodie, but if you want to make Fear insanely jealous, go have a Puka Dog. They're at the Kuhio end of the International Marketplace.

Make me jealous while you're in Oahu and go to Kiawe Grill on Keeaumoku and Makaloa (across from Walgreens). http://www.kiawegrill.com I love their teri beef burger.
